Pumpkin Chocolate Chip Cookies

I can’t let October pass us by without a pumpkin recipe! These are so delicious and super kid friendly. The whole family will love them! They also happen to be gluten free and vegan making them a great treat to bring to a (outdoor) gathering.

Ingredients

  • 1 cup almond flour

  • 2/3 cup old-fashioned oats

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon fine salt

  • 1/4 teaspoon ground allspice

  • 1/4 cup raw sugar

  • 1/2 cup canned pumpkin puree

  • 1/3 cup olive oil

  • 1 tablespoon pure maple syrup

  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate chips (raisins also work well!)

Recipe

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

  2. In a medium bowl, combine the dry ingredients. Add in the sugar, pumpkin puree, oil, syrup and vanilla; whisk to blend. Stir in the chocolate chips last.

  3. Drop 1 big tablespoon of batter onto the baking sheet. They will spread so give about 1 inch in between each cookie. Flatten slightly with the back of your spoon

  4. Bake 17 to 20 minutes. Let them cook before transferring them to a plate as they will be gooey!
