Ingredients:

  • 1 package brown rice noodles

  • 1 lb chicken breasts (I used thinly sliced chicken tenders)

  • 1 cup shiitake mushrooms

  • 1 cup frozen edamame

  • 1/2 cup peanuts, crushed

  • 1/2 cup scallions, sliced

  • 2 eggs

  • 1 cup bean sprouts

  • 1/4 cup mint

  • 1 tbsp sesame oil

  • 1 lime

Peanut sauce:

  • 1/2 cup salted creamy peanut butter

  • 3 tbsp tamari (or soy low sodium soy sauce or coconut aminos)

  • 2 tbsp maple syrup

  • 1/4 teaspoon red pepper flakes

  • 3 tbsp lime juice

  • about 1/4 cup water to thin

Directions:

  1. Bring a pot of water to boil and add brown rice noodles for about 10 minutes or until soft. Drain and set aside

  2. Mix ingredients for peanut sauce and set aside

  3. Separately, make chicken following this recipe (you can also just cook in a pan if you prefer)

  4. In a large pan, saute the mushrooms and scallions until tender in sesame oil (can also use olive oil or avocado oil)

  5. Add in the noodles and peanut sauce. Mix everything together

  6. Make a hole in the center of the pan and crack the two eggs. Let them fry and then scramble in to mix with the rest of the ingredients

  7. When chicken is ready, slice into small pieces and add to the pan along with the bean sprouts

  8. When everything is mixed well, add the peanuts, mint and squeeze of lime juice. Serve hot!
