"Viral Chicken" and Veggies

Here is another Kosher for Passover, but also just great easy and flavorful recipe to have in general. I used tamari but if you are not keeping kosher, low sodium soy sauce or coconut aminos can also be used.

Ingredients:

  • 4-6 thinly sliced chicken breasts or cutlets

  • Salted flour (I used cassava flour but any flour will do)

  • 1/3 cup tamari or low sodium soy sauce

  • 1/3 cup olive oil plus more for coating veggies

  • 1/3 cup lemon juice

  • 1 package of mushrooms

  • 2 cups broccoli florets

  • 1 cup green beans

  • 4 chopped scallions (not in the picture, I didn’t have!)

  • 3 tbsp sesame seeds (optional)

Directions:

  1. Preheat the oven to 350 degrees. Dip the chicken breasts in the flour to coat evenly on all sides.

  2. On a baking sheet, place the chicken on one side and the veggies (besides scallions) on the other, drizzled with a bit of olive oil. Put in the oven for 15 minutes and make the sauce using tamari sauce, lemon juice and olive oil

  3. Take out of the oven and pour the sauce over the chicken and veggies evenly. Toss to make sure evenly coated. Add the scallions

  4. Put back in the oven for another 15 minutes. Take out and make sure the chicken is cooked through. Thicker cuts may need 20 minutes to cook. Sprinkle with sesame seeds and serve!
