Salmon with Pesto Veggie Noodles- An easy weeknight dinner or lunch!

I posted this easy recipe on instagram last night and so many were asking for the recipe so here it is!

Ingredients (for 2 servings):

  • 2 filets of wild salmon

  • 1 Package of Zoodles (or make them with 2 zucchinis)

  • Red Lentil Spaghetti (or any spaghetti)

  • 1/2 cup pesto

  • 1 Lemon

  • Sea salt and pepper to taste

  • Olive oil

  • 1 cup cherry tomatoes

Directions:

  1. Pour about 2 tbsp of olive oil in a saute pan over medium heat. When the pan is hot, place the two salmon filets face down. Cook for about 5 minutes

  2. Flip when the salmon turns a nice brown and cook for about 4 more minutes or until cooked through but still pink in the middle (more if you like medium well). Season with salt and pepper

  3. While salmon is cooking start boiling water for the spaghetti. Add pasta when the water starts to boil and cook for about 10 minutes or until pasta is soft

  4. When the salmon is cooked through, remove from the pan and onto a plate to cool . Add another tablespoon or two of oil and add the tomatoes and zucchini noodles

  5. Cook for about 5 minutes so they soften but still maintain a crunch. I like them more on the raw side! Add the spaghetti when it is cooked and drained along with the pesto and mix it all together.

  6. Serve the salmon on top of the noodles with a squeeze of lemon and a dash of sea salt. The best part? only two dishes to clean!
