Cold Peanut (Miracle) Noodle Salad

I am obsessed with this crunchy cold peanut noodle salad using tofu noodles. Im all about a more substantial soba or buckwheat noodle but these are zero carb, low calorie and just soak up the peanut dressing deliciousness while adding a nice bulk to your salad. Enjoy!

Ingredients:

  • 3 packages of shirataki tofu noodles, thoroughly drained and dried

  • 2 packages of crunchy salad mix (a mix of cabbage, kale, carrots, zucchini, beansprouts)

Dressing:

  • 1/2 cup smooth peanut butter

  • 1/4 cup low sodium soy sauce (or coconut aminos)

  • 2 tablespoons maple syrup

  • 1 tablespoon sesame oil

  • 2 teaspoons chili oil (option for some spice)

  • squeeze of lime juice

Directions:

  1. Drain the tofu noodles under cold water for about 2 minutes. I like to put them in the microwave for 2 minutes to dry them out even more. Then let them cool down.

  2. Add the salad mix to a large bowl. If you cant find an asian style salad mix you can also chop kale, cabbage, carrots, zucchini, and bean sprouts to make your own crunchy salad mix

  3. Mix together dressing ingredients and whisk until blended

  4. Combine the noodles (once cooled) with the salad mix and pour the dressing on to mix through. Serve cold!
