Coffee Crumb Cake

As nothing is normal these days, I am taking a break from my healthy recipes to give you this insanely delicious, comforting coffee crumb cake recipe. You will be the hero in your house, I promise! The secret to the gooey factor? Greek yogurt! Enjoy and remember to share pics with me @mollysbest. I hope you are all staying safe and as sane as possible. Ingredients:

Cake

  • 8 tablespoons (1 stick) unsalted butter, softened

  • 1 cup sugar

  • 2 large eggs, at room temperature

  • 2 cups All-Purpose Flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup Greek yogurt, at room temperature

Topping

  • 1 /2 cup granulated sugar

  • 1/2 cup brown sugar

  • 4 teaspoons cinnamon

  • 4 teaspoons vanilla extract

  • 2 tbsp confectioners sugar to sprinkle on top

Directions:

  1. Preheat the oven to 350ยฐF. Grease and flour a bread pan or use parchment paper

  2. To make the cake: Beat together the butter, sugar, and eggs. In a separate bowl, mix together the flour, baking powder, baking soda, and salt.

  3. Add the flour mixture to the butter mixture as well as the yogurt, stirring well. The texture will be airy, almost like cream cheese.

  4. To make the topping: Combine all of the topping ingredients, stirring until evenly crumbly.

  5. Spread half the batter in the pan, and sprinkle with half the topping mixture. Repeat with the remaining batter and topping.

  6. Bake the coffeecake for 35-40 minutes, the top should be browned but inside still a bit doughy (cook more towards 40 minutes if you donโ€™t want the doughy center)

  7. Take the cake out and wait 10 minutes to remove from the pan to avoid it breaking.

  8. Pour confectioners sugar in a small sifter and sift on to the cake until completely covered, be generous with this!
