Vegan & GF Banana Bread

Here it is- my favorite banana bread recipe! I love making this on a Sunday and having it for breakfast for the week. Enjoy and let me know what you think!!

Ingredients: (10 slices)

  • 3 ripe bananas, mashed
  • 3 tablespoons chia pudding (2 tablespoons chia soaked in 3 tbsp water)
  • 3/4 cup almond milk 
  • 1/2 cup coconut oil, melted and cooled
  • 1/3 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/3 cup chocolate chips
  • 1/3 cup chopped walnuts (spread on top)

Directions:

  1. Preheat oven to 350 degrees and grease a bread dish with coconut oil or line with parchment paper
  2. In a large bowl, mix together mashed bananas, creamy peanut butter, chia seeds, almond milk, coconut oil, and vanilla extract
  3. Mix well then add in rolled oats and baking powder 
  4. Fold in dark chocolate chips then pour into bread dish
  5. Sprinkle chopped walnuts on top
  6. Bake in oven for about 45 minutes, cool before slicing and enjoy!!
