Vegan & GF Banana Bread

Here it is- my favorite banana bread recipe! I love making this on a Sunday and having it for breakfast for the week. Enjoy and let me know what you think!!

Ingredients: (10 slices)

  • 3 ripe bananas, mashed
  • 3 tablespoons chia pudding (1 tablespoon chia soaked in 3 tbsp water) Can use 1 egg if not vegan!
  • 1/4 cup coconut oil, melted and cooled
  • 1/3 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2  cup oat flour (quick oats pulsed in blender until flour consistency)
  • 3/4 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Dash of salt
  • 1/3 cup chocolate chips (optional)
  • 1/3 cup chopped walnuts (spread on top)


  1. Preheat oven to 350 degrees and grease a bread dish with coconut oil or line with parchment paper
  2. In a large bowl, mix together wet ingredients. Then add in the dry
  3. Fold in dark chocolate chips then pour into bread dish
  4. Sprinkle chopped walnuts on top
  5. Bake in oven for about 1 hour. A toothpick should come out dry when it is ready! Cool before slicing
