Tahini Broccoli with Pine Nuts and Cranberries

This is an easy side dish to whip up any week night that is full of flavor and nutrients! It takes boring broccoli up a notch and looks great next to any entree. Let me know what you think!

Ingredients:

  • 4 cups broccoli, cut into florets

  • 2 tablespoons tahini

  • 2 tablespoons olive oil

  • 3 tablespoons lemon juice

  • 2 cloves minced garlic

  • dash of kosher salt

  • pepper to taste

  • 1 cup pine nuts, toasted

  • 1 cup dried cranberries

Directions:

  1. Preheat oven to 450 degrees

  2. mix together all the ingredients besides the broccoli

  3. Pour over broccoli and spread evenly

  4. Roast for 20-25 minutes until crispy and browned

  5. While broccoli is roasting, toast the pine nuts in a toaster or in a saute pan

  6. When broccoli is ready, add the pine nuts and cranberries, squeeze lemon over and serve!
